Joan Crawford's Shoe Closet...

NICE!!!  This photo is of the Famous "Mommie Dearest's" shoe Closet!!  I didn't realize that back in the 40's there were shoe crazed people like me.  I guess I though back then shoes were probably pretty basic and not all that collectable but Joan Crawford shows me differently. I see quite a few I would like to have myself in her closest.  Joan has always held a special place in my heart because as a kid my mom took me to see Mommie Dearest and in during the movie scene "No Wire Hangers" I stated loudly to my mom "that's just like you". Of course she didn't beat me like Joan but it is a great story, the things kids say!!

Pan Seared Rib Eye with Parsley Green Onion Butter...

Ribeye Steak

Salt

Pepper

Canola Oil

Bring steak to room temp. preferably 2 hours prior to cooking set out steaks.  Salt and pepper steak to taste.  Place cast iron skillet in a 500 degree oven to get it searing hot.  When pan is hot coat steaks with canola oil(do not put oil in sckillet put on steaks) and take skillet out of oven and put on the stove top on high heat place steaks in skillet.  Do not touch steaks for at least 1 min to 2 mins to form nice crust turn steaks and cook other side for another 1-2 mins . 1 min for rare 2 mins for med.  Then place skillet in oven cook each side for 1 to 2 mins  1 min for rare 2 mins for medium longer if you would like them more well done.  Take out of oven and let rest on a plate for 10 mins to allow juices to settle.

For Butter 2-servings

4tbsp Butter room temp

2 tbsp Fresh chopped Parsley (1 1/2 tbsp for butter and 1/2 tbsp for sprinkling on top of steak)

1 tbsp Chopped Green Onion

In a bowl smash your butter add 1 1/2 tbsp chopped parsley and 1 tbsp green onion and mix well.

To Serve Steak

Put steak on plate let rest 10 mins after 10 mins place a round melon ball scoop of the butter on top of steak and sprinkle with some parsley and serve!!

Sweet Acorn Squash...

This recipe is for 1 whole Acorn Squash

1 Acorn Squash

4 tbsp Butter

4 tbsp Brown sugar

Preheat oven to 400. Cut Acorn Squash in half, scoop out the inside guts,  mash 2 tbsp butter into each center well of each side,  then add 2 tbsp per side of brown sugar into center well.  Place into a roasting pan and bake for 1 hr to 1 hr 15 mins til golden and soft.  Serve.

Chocolate Souffle with Nougat Whip...

Here is the recipe for the Chocolate Souffle with Nougat Whip I made on The Kitchen with Reese.  It is incredible good!!  Make it you will enjoy it!!

This recipe is for 4 servings

Ingredients

Soufflés

  • 6 ounces milk chocolate (Whatever brand you prefer), chopped
  • 1/4 cup heavy whipping cream
  • 1large egg yolk
  • half a Pinch of salt
  • 3 large egg whites, room temperature
  • 1 tablespoons sugar

Nougat Whip

  • 1 large egg white, room temperature
  • 1 1/2 tablespoons honey
  • 1/3 cup chilled heavy whipping cream
  • 1 tablespoon amaretto or other almond liqueur
  • 1/4 cup whole almonds, toasted, chopped

 

You will also need 4 souffle dishes

Soufflés


  • Butter 4 soufflé dishes; sprinkle with sugar, tilting cups to coat completely and tapping out any excess. Arrange prepared soufflé dishes on large baking sheet.


  • Combine chocolate and cream in large metal bowl. Set bowl over saucepan of barely simmering water and stir until chocolate is melted and mixture is smooth. Remove bowl from over water. Stir egg yolks and salt into chocolate mixture. Using electric mixer, beat egg whites in another large bowl until soft peaks form. Gradually add 1 tablespoon sugar, beating until semi-firm peaks form. Using rubber spatula, fold 1/4 of beaten egg whites into chocolate mixture to lighten. Fold remaining egg whites into chocolate mixture in 2 additions. Divide chocolate mixture among prepared soufflé dishes, filling about 3/4 full   Can be made 2 days ahead. Refrigerate uncovered until cold, then cover and keep chilled.

Nougat Whip


  • Using electric mixer, beat egg white in medium bowl until soft peaks form. Gradually add honey, beating until soft peaks form, about 3 minutes.


  • Combine cream and amaretto in another medium bowl and beat until thick and soft peaks form. Fold whipped cream mixture and almonds into meringue.  Can be made 2 hours ahead. Cover and chill.


  • Position rack in center of oven and preheat to 400°F. Bake soufflés on baking sheet until puffed and tops feel firm, about 16 minutes if at room temperature and about 18 minutes if chilled.


  • Serve soufflés immediately, with Nougat Whip on top

Almond Stuffed Chicken...

Ingredients

  • 1/3 cup garlic-and-herbs spreadable cheese (such as Boursin light)
  • 1/4 cup slivered almonds, toasted, coarsely chopped, and divided
  • 3 tablespoons chopped fresh parsley, divided
  • 4 (6-ounce) skinless, boneless chicken breast halves
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 1/2 teaspoons butter

Preparation

  1. 1. Combine spreadable cheese, 3 tablespoons almonds, and 2 tablespoons chopped fresh parsley in a small bowl. Set aside.
  2. 2. Cut a horizontal slit through thickest portion of each breast half to form a pocket. Stuff 1 1/2 tablespoons almond mixture into each pocket; secure each pocket with a wooden pick. Sprinkle chicken with salt and pepper.
  3. 3. Heat butter in a large nonstick skillet over medium heat. Add chicken to pan; cook 6 minutes on each side or until done. Remove from pan; cover and let stand 2 minutes. Top chicken with remaining 1 tablespoon almonds and remaining 1 tablespoon parsley.

33,000 Calories a Day...

This is very sad!!  I know alot of people out there think that if you are overweight the answer is just to stop eating and yes I am guilty of thinking that also, but for many people it seems that they are locked in a food prison and just can't stop.  Watch the video below it is short but, My heart goes out to people who just think they are stuck.  Eating can become a disease just like alcoholism or drug use.  Eating gives people comfort and is obviously giving these people something that they are not getting else where in their lives.  We should feel compasion towards others and realize they are going thru something that we cannot know and not stare or make comments and we should teach children the same!!
